COLD BREW COFFEE WITH SWEET VANILLA CREAM

Image
COLD BREW COFFEE WITH SWEET VANILLA CREAM  I was having a particularly bad morning. Dave had picked up my grocery order from Walmart two days prior (if you haven’t tried it, the online grocery ordering is amazing), which had included a container of plain yogurt I needed for the Grilled Gyro Kabobs recipe I had in my head. I had gone to make it the night before, but as I was cooking, I realized I had no recollection of unpacking yogurt. Sure enough, no yogurt anywhere in the fridge. I was instantly pissed off, wrapped everything back up and threw it in the fridge. My first instinct was to lash out at Walmart for obvious incompetence. My second instinct was to ask Dave if he was absolutely positive he got all the groceries out of the car. Of course, he assured me, but I’ll go check anyway. This Cold Brew Coffee with Sweet Vanilla Cream is a favorite of mine from Starbucks! On those awful days when they’re out, now I can make my own! INGREDIENTS 2/3 cup coffee grounds 3 cups water 1/2...

maple parsnip morning glory coffee cake

Image
maple parsnip morning glory coffee cake  We are off to a great start in maple sugaring season here in Vermont, so I am temporarily straying from my usual vegetable side dish and weeknight meal line-up for a brief moment to bring you this moist and fragrant Maple Parsnip Morning Glory Coffee Cake. I couldn’t stop obsessing about the idea of using parsnips instead of carrots in a morning glory recipe. I wondered if it would taste good, so I just had to make it happen. I ended up making morning glory coffee cake instead of muffins; a celebration worthy recipe, if you will. And I’ll just cut to the chase… it came out amazingly well. The maple syrup and naturally sweet parsnips and raisins make this ultra moist and fragrant. You can serve it for Easter brunch or during maple sugaring season or just for any reason really! It’s a delicious way to enjoy parsnips in baking! Ingredients Streusel Topping ¼ cup old-fashioned oats ¼ cup all-purpose flour 2 tablespoons granulated natural cane su...

BACON CHEESEBURGER CAULIFLOWER CASSEROLE

Image
BACON CHEESEBURGER CAULIFLOWER CASSEROLE  This Bacon Cheeseburger Casserole is made low carb secretly using cauliflower as the base and no one will know! All the flavors of a cheeseburger made into a layered casserole dish with the secret vegetable ingredient as the base! This recipe was first published in March of 2015 and has been updated below along with a How To Video. I do love a cheeseburger every once in a while, but I always skip the bun. I’m gluten free, buns at burger joints are not. I’m eating as low carb as I can to take off some weight gained while writing my cookbook, burger buns do not fit into the low carb category so I forgo it. Ingredients 1 head cauliflower or about 6 cups florets 1/3 cup 1.4oz (40g) coconut flour or choice flour 1/4 teaspoon salt 6 ounces uncured reduced sodium bacon 1 1/2 pounds ground beef or turkey 1 teaspoon onion powder 1 teaspoon oregano 1 teaspoon garlic powder 1 teaspoon salt 1/2 teaspoon pepper Sauce 1 tablespoon butter 1 tablespoon coc...

LEMON CHICKEN RICE SOUP

Image
LEMON CHICKEN RICE SOUP  Here’s a Lemon Chicken Rice Soup recipe that is just like the Greek Lemon Chicken Rice Soup you order in a good Greek restaurant. I don’t go out for fast food all that often, but Greek food is a big-time draw when I do. Gyros, garlic dip and Lemon Chicken Rice Soup are my favorites. This soup is such a great copycat from my favorite Greek restaurant. The texture of this soup is thick and creamy, though it’s completely low fat. Added chicken and rice make this soup filling and satisfying. And the lemon gives it a satisfying tangy flavor. and this it popular recipe. INGREDIENTS 7 cups fat free chicken broth 1 cube chicken bouillon 1/2 cup uncooked white rice 1/3 cup diced carrots 1/3 cup diced celery 1/3 cup finely chopped onion 1 1/2 cups cooked chicken breast chopped 2 tablespoons butter 2 tablespoons all purpose flour 2 large eggs 4 tablespoons freshly squeezed lemon juice salt and pepper to taste lemon slices for garnish sliced green onions for garnish IN...

Strawberry Sweet Rolls

Image
Strawberry Sweet Rolls  Strawberry sweet rolls are the perfect spring treat! The dough is made with a strawberry cheesecake coffee creamer that add a nice strawberry flavor. Inside the sweet rolls is cream cheese and strawberry pie filling that not only smells amazing while being baked but tastes amazing too! My son insists on calling these strawberry cinnamon rolls because they look like cinnamon rolls, but with strawberries instead. I even almost named them strawberry cinnamon rolls, but I know I would get comments that would say there isn’t any cinnamon in these AND it’s true. Soooo.. I’m going with strawberry sweet rolls and I think that’ll work out just dandy. I really love how these came out. I’m thinking of trying a couple other variations of this recipe too. We’ll have to wait and see if I EVER get around to it I suppose. I always have so many ideas and half of them never get to come to life. These strawberry sweet rolls have a homemade sweet roll dough that's been made wit...

BEST SPICY SHREDDED BEEF TACOS

Image
BEST SPICY SHREDDED BEEF TACOS  However, like any other Mexican aficionado, occasionally all I want is a good old-fashioned taco or burrito with all the fixins’, and I want it within the confines of my own home. In this instance I’ll head to the grocery store and pick up the ingredients for a classic hard-shell taco with ground beef, but if I’ve got a few hours on my hands, today’s Spicy Shredded Beef Tacos are what will appear on our dinner table. I’ve actually become quite smitten with shredded beef in just about every form of Mexican cuisine, so naturally the filling isn’t just limited to tacos. You could also stuff it in enchiladas, taquitos, flautas, burritos, the lit goes on. Once the meat has cooked down, it’s shredded with two forks and tossed with the remaining cooking liquid. From this point on, you could really do what you want with the shredded beef, but of course today, we’re stuffing them in taco shells. Except these aren’t your average taco shell. Instead of stuffing...

5-INGREDIENT SLOW COOKER STEAK FAJITAS (PALEO, WHOLE30) There are only 5-Ingredients in this slow cooker steak fajitas recipe. This easy yet delicious whole30 and paleo dish is perfect any day of the week. Yesterday was National Margarita Day and I completely missed out. I will not miss out on Taco Tuesday! Fajitas count right? I’m all about simplicity these days so there are only 5 ingredients in this recipe and they are: beef, bell pepper, onion, salsa, and fajita seasoning. BEEF – I used a 2 pound grass-fed, angus beef boneless chuck roast sliced up. You can use your preferred cut of beef whether it be roast, tri-tip, flank steak, etc. Salsa – My slow cooker salsa is a great option! Otherwise use 20 ounces of your favorite brand. You can even use salsa verde. Seasoning – I won’t preach because I use packet on occasion, but in general I heavily encourage you to ditch the store-bought seasoning packets. Below is my go-to homemade fajita seasoning. You probably have all these spices i...
